Vilmart is obsessed with good vineyard work. They have plenty of low-yielding older vines. And they make really delicious wine. Taste and you will understand.
Cuvee Rubis is 90% Pinot Noir with 15% red wine incorporated from Rilly-la-Montagne and Villers-Allerand on the Montagne de Reims. Aged in large foudre with no malolactic. Strawberry compote, cherry, candied pear, brioche, pink grapefruit on the nose. Full bodied and expressive with a voluminous core of ripe fruit, succulent acidity and a delicately phenolic finish. The most indulgent bottle in the collection. 92 pts Vinous.
