The 2023 Gilbert Picq Dessus La Carrière comes from two tiny parcels planted between 1970 and 1973 directly above an old limestone quarry in Chichée. The topsoil is extraordinarily thin, exposing the vines to the Kimmeridgian limestone that defines classic Chablis.
Made entirely from Chardonnay and raised without oak, the wine spends approximately 12 months on its lees, allowing the vineyard rather than the cellar to do the talking. Oyster shell, lemon, pear and green apple meet crushed stone and iodine, with mouthwatering acidity carrying everything into a long, saline finish. This is old-school Chablis: mineral, precise and unapologetically driven by its limestone soils.
