This is one of those bottles I open and immediately feel like I have been let in on something most people will never know about.
Chateau Simone is virtually the only producer in Palette, its own private appellation near Aix-en-Provence. The Rougier family has farmed these north-facing vines organically for seven generations and has never once used cultured yeasts. Never. What comes out of the glass is unlike anything else from the south of France. Plum, truffle, pine forest, a thread of Mediterranean spice. Structured and serious on the palate with the kind of depth that takes years to reveal itself fully. Winston Churchill visited and became a devoted convert. I understand completely.
