Chardonnay brings finesse and precision, while Pinot Blanc and Auxerrois contribute fruit and texture. The grapes are harvested by hand and whole-cluster pressed before fermentation in temperature-controlled stainless steel. Traditional-method secondary fermentation and at least 24 months on the lees build fine bubbles, brioche complexity and depth while a very low Extra Brut dosage preserves its freshness and mineral character.
