This bottling blends fruit from coastal and inland sites, fermented separately with native yeast in old French oak, then foot-tread and whole-cluster pressed. The wine rests on lees for eight months before being racked once to blend and bottle, unfiltered and unfined. Aromas of stone fruit, citrus peel, and crushed rock lead to a palate of maritime brine, green apple, and hay, with bright acidity and mineral tension.\u003c\/p\u003e\n\u003cp\u003eFermented with native yeast in neutral French oak, aged on lees, bottled without fining or filtration with minimal sulfur.
