Elisabetta Foradori converted to biodynamics in 2002 and has spent two decades unlocking what these ancient Dolomite vineyards are truly capable of. The Fontanasanta Nosiola is fermented and aged for 8 months on the skins in Spanish clay amphorae, a method as ancient as winemaking itself. Complex, layered, with exotic fruit and herbal notes on the nose and a palate that is markedly fresh with a finish that just keeps going. In its youth it is reserved and austere. Give it time and it reveals an intensity that is genuinely unlike anything else in this collection. Biodynamic farming. 10,000 bottles produced. One of my favorite discoveries.
