Philipponnat has farmed this remarkable walled hillside in Mareuil-sur-Aÿ for generations, producing a Champagne that is as much about its vineyard as it is about the house. The slope reaches an astonishing 45 degrees, facing directly south, with pure chalk lying just beneath the surface. It is an extraordinary place to grow grapes, and one that produces wines with a concentration and mineral character unlike almost anything else in Champagne.

The 2014 is a particularly beautiful expression of this vineyard. A cooler, occasionally challenging growing season produced a wine with remarkable freshness and precision rather than overwhelming richness. The blend is 71% Pinot Noir and 29% Chardonnay, with 64% fermented in oak and no malolactic fermentation, preserving the natural acidity. The Champagne then spent eight years aging on its lees before release, developing extraordinary complexity and texture. Dosage is just 4.25 grams per liter, allowing the vineyard's chalky mineral character to remain at the center of the wine.

What makes this 2014 so compelling is its combination of delicacy and depth. Mirabelle plum, ripe pear and yellow peach mingle with acacia blossom, fresh almonds and subtle toasted pastry. The palate is beautifully textured, with fine bubbles and a remarkable sense of energy. There is a long, saline finish that seems to carry on well after the wine has left the glass. We love Clos des Goisses because it is Champagne that behaves like a great wine first and a sparkling wine second. It deserves a proper glass, a beautiful meal and enough time to reveal everything it has to offer.

//cdn.shopify.com/s/files/1/0616/2953/0197/files/bouteille-clos-des-goisses-extra-brut.jpg?v=1765156920
billecart-salmon-le-rose-extra-brut
Billecart Salmon Le Rose Extra Brut NV

Some Champagnes have a reputation that feels entirely deserved, and Billecart-Salmon's Le Rosé is one of them. Founded in 1818 through the marriage of Nicolas François Billecart and Elisabeth Salmon, this family-owned house in Mareuil-sur-Aÿ has spent generations perfecting a style built around delicacy, freshness and beautiful balance. Its rosé has become something of a benchmark, not because it is the biggest or most powerful Champagne, but because it achieves something much harder: elegance that feels completely effortless.

Le Rosé brings together Chardonnay, Pinot Noir and Meunier from selected vineyards across Champagne. A small proportion of Pinot Noir is vinified as red wine, giving the Champagne its delicate salmon-pink color and lovely red-fruit character. The house uses cool fermentation in stainless steel to preserve freshness, followed by 36 months of aging on the lees. The newer Extra Brut release has a particularly restrained dosage, allowing the fruit, texture and mineral character to speak clearly. It is a thoughtful evolution of a wine that was already exceptionally well regarded.

In the glass, there are wild strawberries, fresh raspberries and white peach, followed by blood orange, citrus zest and a delicate suggestion of rose petals. The bubbles are remarkably fine, creating a silky texture that gives way to a clean, refreshing finish. What we love most is its versatility. It is beautiful as an aperitif, but even more interesting alongside salmon, tuna crudo or a plate of Dungeness crab. Marc Hébrart is one of those estates. Based in Mareuil-sur-Aÿ, the domaine is led by Jean-Paul Hébrart, whose thoughtful approach to vineyard selection and blending has made his wines favorites among serious Champagne drinkers. His Special Club is especially interesting because it belongs to a small collective of independent growers who submit their finest vintage Champagnes to a rigorous selection process. The result is a wine with genuine pedigree, without the familiar luxury-house price tag.

The 2020 draws Pinot Noir from Premier Cru Mareuil-sur-Aÿ and Grand Cru Louvois, complemented by Chardonnay from Mareuil-sur-Aÿ and Grand Cru Chouilly. These vineyards bring together the generosity of the Marne Valley with the freshness and mineral character of Champagne's chalk-rich soils. Fermentation takes place in stainless steel, preserving the purity of the fruit, while approximately three years of aging on the lees develops additional texture and complexity. A modest dosage of around 5 grams per liter provides balance without obscuring the wine's natural freshness.

What makes this Champagne so enjoyable is its combination of delicacy and substance. Fresh peach, red apple and subtle red berries mingle with lemon zest, cherry blossom and warm shortbread. The mousse is fine and creamy, with a gently rounded mid-palate that gives way to a clean, mineral-driven finish. There is nothing severe about this wine. It is generous enough to enjoy on its own, yet structured enough to accompany a beautiful meal. Instead of relying on a single harvest, he believed the secret was to build a library of individual wines that could be brought together to create something more complex than any one vintage could achieve. Nearly two centuries later, that philosophy remains at the heart of Grande Cuvée. Each edition is different, and each is a remarkable exercise in patience, blending and understanding the character of Champagne's vineyards.

The 173rd Edition is built around the 2017 harvest, a challenging growing season that required careful selection. To bring balance and depth, cellar master Julie Cavil drew on the house's extraordinary reserve wine library, assembling 150 wines from 13 different years, reaching all the way back to 2001. The final blend is 44% Pinot Noir, 34% Chardonnay and 22% Meunier, with reserve wines making up 31%. Years of cellar aging bring the different components together, while a restrained dosage of 4 grams per liter preserves freshness. The result is a Champagne with extraordinary breadth, but also the precision and energy that make Krug so distinctive.

What we love about this edition is how generously it opens in the glass. Ripe peach, golden apple and lemon curd mingle with toasted brioche, roasted nuts and a little vanilla pastry cream. As the wine develops, there are hints of citrus peel, fresh herbs and subtle spice. The bubbles are beautifully integrated, giving the palate a creamy, almost seamless texture before a long, refreshing finish. This is Champagne that deserves a proper wine glass and a little time. We would happily pour it throughout dinner, from the first oysters to the final course. Krug is never simply about bubbles. Rather than blending each year to recreate the same familiar taste, Jacquesson numbers its main cuvées, allowing each release to reflect the growing season that produced it.
